What else was on the menu?

The menu at l’Ambroisie is not large, and it is not prone to change. So, you can find photos of most of chefs Mathieu and Bernard Pacaud’s dishes on the internet. My friend Adam of A Life Worth Eating, who has eaten there more times than anyone I know, save my friend La Tache, probably has the largest library of l’Ambroisie food photos in the world.

I’ve only eaten there once, in December of 2008, during the height of white truffle season.  From that day’s menu, the following dish speaks to me on this cold and gloomy day.

Foie Gras de Canard
Confit aux épices, poires sauvages á la réglisse.
