Last week, Trey Foshee of George’s at the Cove posted an amazing photo of some gnarly huitlacoche on the cobb.

As its more colorful name, “corn smut,” suggests, there’s nothing pretty about this fungal growth. The elephantitis of the vegetable world, its results are unsightly if not incredibly delicious – it has a beefy, mushroom aroma with muscle.  I call it the truffle of the Southwest. 

The thought of huitlacoche sent me dumpster diving in my bin of photos from Santa Fe, New Mexico, where I had some good huitlacoche, and some weak huitlacoche.

For this nineteenth photo of the week, I give you big skies over Taos, New Mexico.
